This size soufflé dish is perfect for making 5-egg size soufflés. Because of its mass (weight), it needs 25 minutes @ 400� to be perfect: brown, firm outside with a soft, creamy (but not runny) inside.For 6-eggs souffles use the 2 quart size souffle dish.It cleans up well in the dish-washer and nests perfectly in the 2 quart size dish, saving storage space.The "French-made" dish sells for more than four times the cost of this one, making this an excellent buy.

This was my first purchase of a BIA Cordon Bleu product. I was suprised by the high quality of the product, particularly so because it was so reasonably priced. No more struggles to get the souffle mixture into a bowl that just wanders off!Shipping took several days, so I had to change the menu while I waited for my new bowl, but it was worth the wait.I highly recommend this dish.
